Solar Oven Recipe: Spinach Goat Cheese Quiche

Spinach Goat Cheese Quiche

Pillsbury refrigerated pie crust

3 small eggs

½ cup goat cheese crumbles

2 Tb chopped pimientos

2 Tb. Chopped spinach (fresh or canned)


Unroll one pie crust.  Using a GoSun Sport Pan as measure, place the bottom over the crust and use a knife to cut out 7 rectangles that will fit on the bottom of 7 pans.  Press gently. Place the pans into GoSun Sport tray.


In a bowl, combine the eggs, goat cheese, pimientos and spinach.  Divide the egg mixture into the 7 trays (about 2 TB each). Bake for about 35-45 minute, or until the egg congeals.
