Solar Oven Apple Strudel

1 Granny Smith apple, peeled and cored
½ tsp lemon juice
2 TB, sliced almonds
1/8 tsp cinnamon
1 TB + 1 tsp sugar
5 sheets Athen’s Phyllo (filo)
1 TB melted butter
In a bowl, combine apple slices, lemon juice, almonds, cinnamon and 1 TB of sugar. Mix well. Place 5 sheets of phyllo on a flat surface, each slice directly on top of the other. Place apple mixture along the short edge of the phyllo stack. Roll up like you would a burrito. Line Go with parchment paper. Place roll in oven. Cover top with melted butter and sprinkle with 1 tsp. of sugar. (Butter can be melted in the oven using a silicone baking pan.). Cook for 20-30 minutes or until the phyllo is golden.

2 TB + 2 tsp sugar
10 sheets Athen’s Phyllo (filo)
2 TB melted butter
In a bowl, combine apple slices, lemon juice, almonds, cinnamon and 2 TB sugar. Mix well. Place 5 sheets of phyllo on a flat surface, each slice directly on top of the other. Place half of apple mixture along the short edge of the phyllo stack. Roll up like you would a burrito. Repeat the process to make a second roll. Line oven with parchment paper. Place both rolls head to foot in the Sport oven. Cover tops with melted butter and sprinkle with 2 tsp of sugar. (Butter can be melted in the oven using a silicone baking pan.) Cook for 20-30 minutes or until the phyllo is golden.
