I once sold 1,000 lbs of onions to an Indian restaurant. It wasn’t even a big restaurant, like 60 seats. I figured they were on sale that week so he wouldn’t buy them again from me for a month or so. Next week, no sale, dude buys another 1,000 lbs. Presumably he was involved in some sort of underground onion black market.

Ingredients:
1 white onion, sliced thin
1 clove garlic, minced
2 sprigs thyme
6 eggs
1 oz heavy cream-leave out if you’re off dairy
Cheese of your choice-gruyere would be great-optional
Olive oil
Directions:
Line your GoSun Sport insert with parchment paper. Drizzle olive oil in the bottom and evenly spread out the onion and garlic, season with salt and pepper and toss in the thyme sprigs. Let this cook for 30 minutes until the onions are brown and soft. Beat the eggs with the cream and salt and pepper and slowly pour over the onions. Let cook for 30 minutes until set. Top with cheese and place back in your GoSun for a minute or two to let the cheese melt. Serve with a light mixed green salad
