Bacon Fat and Pickle Juice Braised Green Beans
I’m fairly obsessed with pickle juice and cook with it all the time. Sometimes I use it for cocktails kind of like a dirty martini. Amazingly, there are a few companies that sell pickle juice in a bottle as a fitness drink. Electrolyte replenishment or something. I’m all for pickle juice but not sure we’re going to see a Gatorade cooler of pickle brine dumped on the winning super bowl coach anytime soon. I guess it would be better than having a bucket of bacon fat dumped on you.
Prep Time: 15 mins
Cook Time: 1 hour
Serves: 4 as a side
Ingredients:
1 lb green beans, snipped
1/2 white onion, sliced thin
1 clove garlic smashed
2 TB bacon fat
1/2 cup pickle juice
Directions:
You can layer this in all nice and orderly, or just mix it all in a bowl with salt and pepper and load the insert. The choice is yours...but choose wisely or your face might melt like the bad guy in Indiana Jones who chooses poorly...
Cook it for an hour and serve with pork-maybe I need to make a pulled pork recipe for this here solar cooker
